It’s criminal that Roadfood doesn’t list this restaurant on its Utah page. Best mole I’ve ever had. 

Red Iguana is fantastic and absolutely deserves to be reviewed on Roadfood.  100% agree on the mole.  I will be back in SLC in June and can’t wait to eat there again.
