I’m glad Dennis talked about the corn sticks. From what I’ve gathered, they seem to be an eastern North Carolina thing. When I had them in 2 eastern N.C. barbecue places last summer, staff told me they arrive frozen from an area producer and are then deep fried. I’ve been told almost no one makes them fresh anymore. I’ve enjoyed them, but they come in third behind good cornbread and hush-you-puppies. I would love to try corn sticks made fresh. Temperature does make a difference when it comes to corn bread products; "hot" is much better.
