Lots of small operations actually just cut them (unpeeled – some places do not even wash them) with a manual wall mounted lever operated french fry cutter and throw them right into the fryer for a minute and blanch them. Then they drain them and fry them as needed. Not the way I would do them; Not the way I like to eat them either.
You can get a free standing potato peeler or a counter sized one that can sit on a drainboard and empty right into your sink…That’s the type I’d suggest. Try a used equipment place. If you do a large volume like we use to, we used a "Greens Machine" (looks like a huge salad type spinner)to get the water off the peeled potatoes.
