Frozen quail are farm raised and arre very tender. Fry them very lightly and make a cream gravy. Serve w/ rice and biscuits.
Wild quail are a true treat. NC’s quail population has dropped 80% in the past twenty years so they are now scarce. I won’t even shoot them anymore they are so scarce. Wrapped in blanched bacon and grilled they are wonderful.
