Why don’t we start here: almost no one gets prime rib. If you’re paying less than, at a guess, $35-$40 (NYC prices, do your own extrapolation) for an order, a la carte, rest assured that you’re not getting prime rib. Say what you will; unless you can show me the USDA Prime stamp on the fat, you’re whistling in the wind.
I haven’t had Prime rib in a decade, probably.Where do you live? I can get prime rib whenever I want it. We have it every single Christmas and everytime we want a special meal.[8D][8D]
I’m sure you can and do. I have no doubt that it’s possible to find prime beef in many places in this country. my remarks were solely about the economics of serving it for profit.
i live on a little island just east of hoboken, nj. i shop for my business at the hunt’s point market. i think it’s the biggest wholesale meat market in the country, but i can’t swear to it, and i’m not willing to do the research. my butcher is one of the most respected wholesalers in nyc, if that means anything, and numbers all of the major steakhouses among his clients, from luger’s on down. so i’m always inclined to take his word about meat. of course, he could be wrong too, having only been selling prime beef for 50 years.
