Am I included in "young" at 35? I guess I can’t swear to what is prime, as I’m not in the kitchen every time I order. But I order it every chance I get from Minneapolis to Chicago to Kansas city to your finer ski resorts in Colorado. I’m a big old meat eater an I don’t mind paying. We are blessed in the midwest to have excellent farmers and local butcher shops. The animal goes in one end of the little brick building and comes out (no longer under it’s own power) 40-60 feet later…at which point I purchase him.
