Ok. I want you to all hold your collective noses. My Grandmother, a Polish Lady and my Mom a German Lady would collaborate to make potato pancakes. They both agreed that the mashed potato patties fried, were just that mashed potato patties. Fine.
Potato pancakes were on the other hand are what we have previously discussed. Grated spuds and onions, maybe a scallion added tossed in flour and an egg to bind. Cooked in butter or oil, (a small amount of one or the other, just so they would brown on the ends.) So, this is where you have to hold your noses. My Mom and Grandmother would serve them with chili sauce. Not the Southwest style but the Heinz style. It is avalable in most grocery stores.
I on the other hand would think of pancakes and think…maple syrup and butter. That is the way I eat them to this day. No sour cream no applesauce (applesauce and potatos?)
This is the way I make them and this is the way I eat them. Call me crazy but they are so good.
