I’m not sure. But that’s the way he did it, and that is my model. And I’ll say again it was the best darn pizza I’ve ever tasted. So he must have done something right. I have in years since had pizza all over the country, including New York City and have still never tasted better.
Like I said, he moved pizzas pretty fast so a pie never sat under the lamps for more than a few minutes before it was all gone.
