I love potato kugel. But I really like the consistency of the kugel that I get when using the store bought mix. When I make kugel from scratch I get a very heavy consistency … I need to find a better recipe. I suspect the store bought mix uses potato flour in all or part, rather than straight potato.
I like to serve it with warm "cherry soup" … just buy a couple can’s of pitted tart cherries in water, empty into saucepan, add some extra water and a cinnamon stick, some cloves and some sugar to taste, and simmer over medium heat untill the sugar is dissolved (can add just a drop of red food color as well … I know, sacrilege – but I like the nice presentation). Serve the compote like soup.
Absolutely *wonderful* with kugel or with potato pancakes (and a side of sour cream of course)!
