Before your first time out, have 3 or 4 practice runs for freinds and family in your back yard. Your weaknesses will show themselves quickly. Start with a smaller, simpler menu. People will wait to order, they will not wait for their food. Have a definite well marked order area and ONLY take orders there. Same for a pick up area. YOU must be in control of your procedures. Dont try to be everything to everybody in everyway. Your core menu needs to be what you can make fastest with the best margins. The rest of your more special items can be started as specials a few at a time. Speed, quality and profit are the most important things to work at.
