Open kitchens bother me even as a patron, so there’s no way I’d want to deal with it as a chef.

When I dine out (which is often) all I want to do is relax and have someone serve me for a change. All I want to see is the quite, peaceful atmosphere of a nice dining room – not the hurried chaos of a kitchen staff going full tilt. I know open kitchens are a trend right now, but I just don’t see it – nor do I want to.

Nor am I inclined to reveal the goings-on in my own kitchen. Some things are just not meant for public view.
