I bet you could, given the Chicago Style monicker, find a good whitefish or perch or carp or even chicken, pork and/or beef source and modify the recipe only a scosh.
I don’t know New York, but I bet Benzee could think up a good local comestible to use.
Pineapple would do the trick, too, and it’s easy to find in Hawaii.
