I’d be inclined to char the onion and jalapeno (I’ll bet a poblano or serrano would work equally well) in some coals in the grill first, and add the brown sugar to taste at the very end.
A Ancho Chile is actually a dried Poblano. A dried serrano would add a lot of heat. But serranos have a very good flavor as well. …Russ
