One of my alltime favorite sandwiches is turkey on grilled sourdough with green chiles, guacamole and melted pepper jack cheese.

Also the Miss Albany diner in downtown Albany, NY makes a great "blackstone," warm roast beef with lots of melted new york cheddar, and empire sauce on rye.
