I am a purist where egg salad is concerned too – Hellman’s and S&P. My Mississippi raised Mama made it with home made mayo. I loved it – but will never bother with it as long as Hellman’s is around.
Makes me think of the "Sick Day" food she made me though.
A boiled egg, cooked about 5 minutes. Peeled and mashed with S&P and some good saltine crackers and some real butter.
Yummers.
