We call it egg mayonnaise over here[:)] and I have to go with the less is more approach. Eggs, mayo, salt, pepper. Has to be the best eggs you can find in that case though, fresh, free range and organic if possible. I like the egg mayo plain with maybe the classic Brit accompaniment of cress, fresh white, wholemeal or maybe lightly toasted pitta bread. Sometimes I like sliced ripe tomatoes, the sweeter the better.
