Mine is mayo, chopped eggs, S&P and a teeny dab of sweet-hot mustard.
My favorite tea sandwich is (from the top down);

spongy white bread
egg salad
spongy wheat bread
cream cheese mixed with finely chopped green olives
spongy white bread

I could eat a whole plate of them, especially if the bread is cut into teddy bear or other animal shapes.
