Oh yeah…buffet meal. Red beans & rice would work well, also Jamabalaya and/or Gumbo. Serve coffee with chicory and hurricanes. Pretty much any seafood would do, but especially crawfish (which will be in season in May), alligator, shrimp and oysters. If you can get your hands on some boudin (also available at CajunGrocer), go for it! Etouff�e would work well on a buffet also. Pecan pie, and pralines.
