Good point. One of my greatest childhood food memories is a New Year’s Eve pig roast on Cushman Pond in Lovell, at a "camp" we had to snowmobile into. Old Mainiacs had been cooking it (and their livers) for at least a day, in the snow, and I remember it as the best tasting pork of my life.
On the other hand, it’s nice to know someone in New England is trying to make a reasonable ‘cue.
