I’d just make a bechamel sauce adding cheddar and a few types of Swiss with a little Parmesan, a sprinkling of maybe dry mustard or nutmeg (Salt and Pepper) in a large ratio to the amount of macaroni being used. I’d add more cheese and panko to the top after putting it in a baking dish and crisp it up under the broiler. I wouldn’t bake it.
