I remember making a cornflake crusted pork chop decades ago when I was in high school for my family. My father loved them! The recipe was from a women’s magazine, like Redbook or one of those. The pork chops where seasoned with salt and pepper then coated with a mixture of mayonnaise (not Miracle Whip) and sour cream with paprika, and more salt and pepper. Then they were rolled in cornflake crumbs, drizzled with melted butter and baked until done. A truly healthy dish![;)]divefl, I hadn’t thought of that dish for years and years! I don’t know if it’s similar to the one you had, but my family loved it. I had to go to a real meat market to get thicker cut pork chops, our grocery store had only thin ones.
I don’t remember the drizzling with butter (that mean they are healthy [;)]) but the rest could be it. I’ll have to play around.
the butter probably helped the corn flakes to bond to each other to create the crust to hold the creamy stuff in. Otherwise, the cornflakes would absorb to sour cream/mayo mixture.
I’ve tried searching for this recipe too. So far, no luck, I emailed my mom to see if she’s heard of it, but I haven’t heard back yet. (My Mom knows a ton of those older classic dishes.)
