I love pork chops! I, too, like them slightly pink. I hate when I over cook them! I do the egg wash, seasoned bread crumbs and then fry them quickly just until they get a light brown crust; they will be raw inside. Then I put them in a 350 degree oven until they are just done and the juices run clear. Usually takes only 15 to 20 minutes depending on the thickness.
I like to use rib chops or center cut rib chops…I don’t like the center cut chops because they have a part that is darker colored pork and I don’t like the texture or taste of that little piece. It is very tender, but I don’t like it.
