If you expect to sell 60-80 dogs/hour, you’ll need a second set of hands, especially if you’re dressing the dogs. Every time you touch money or any thing else that’s not food, you’ll have to take the gloves off and replace them with a new pair when you return to handling food to avoid contamination. After years in this business, I can handle one dog a minute, hand out soda, and make change, when I’m the only person working the cart. I don’t dress the dogs. I have a table with condiments where customers dress their own. You’ll also need to replenish water in your pans, replenish condiments, keep the condiment dispenser clean, hand out soda or any other products and make change. To work a fast track requires at least two people. I wish you the best of luck in your search for mentor. There are programs out there that supply ‘how to" books as well as cd’s. I know of one professional business school that offers a program for street vendors, but can’t recall the name at this time.
