Although my mom isn’t Italian, she made great Italian food when I was a kid. She never let any of the vegetables over brown. I’ve always been surprised by co workers who fire the onions and garlic. Yuck!
One thing Lidia liked (and still does on her PBS show) is caramelizing things. Onions, meat surfaces, tomato paste. Sweating the vegetables until tender, then adding the tomato paste and caramelizing it makes a great base for ragouts and guazettos. Layers of flavors.
