Interestingly enough, I learned that sauce from Lidia when helping to open one of her restaurants. She didn’t like the garlic, shallots, onions, what ever aromatics, to get brown. Sweat, sweat, sweat until very tender, but not browned. They are much sweeter that way. I learned a lot while working at Lidia’s.
