I have never used the commercial cooker. This one is owned by my friend, who built it and has been cooking on it for 15 years or so. We have never had a temp problem in the 10 or so pigs I have cooked with him. I imaging the larger unit would certainly accomodate a larger pig. We had to muscle in a 75 pounder once, so we try to stick to the 60-65lbs.
