this is very similar to the reason I will never make from-scratch "Enchiladas Pollo Vera Cruz" again.
After a couple of hours of boiling a whole chicken, cooling it, picking all the meat off, making the sauce (from fresh vegetables!), assembling the carefully rolled enchiladas topped with frest Green Chile Bechemal sauce and cheese, I managed to drop the whole tray upside down on the kitchen floor instead of into the preheated oven rightside up.
Now, I use shortcuts, figuring to appease the gods by not displaying hubris. [;)]
