I have some experience with local chicken houses. Wander- Chicken Betty is probably whom you were thinking of in relation to many of KC’s best chicken huts. She had fiery red hair and a personality to match! She made the rounds to many different restaurants you mentioned- and taught them a thing or two. I worked, for a time, at Granny’s and let’s just say that business, and business partners, step in the way of good food.
The torch has tried to be passed on to KT Fryers and Opal’s Kitchen. KT’s is probably the way to go.
Anyone out there have any good info, or stories, on Chicken Betty? I would love to gather some additional information. I believe she last worked at an auto auction and most of the folks there had no clue of what type of cook they had in the midst. My last interaction with her was at the Westport Diner in KC (best biscuits, honey butter, and Sunday jazz jams)
