I was recently hired as the F & B Director of a rural lodge in an Indiana Sate Park. I have three pressure fryers in the kitchen that my staff only uses to fry chicken. Even though I am a C.E.C. and from Kentucky this is my first exposure to the Pressure Fryer. Surely, there are other menu items that can be made using these fryers. Anyone have any ideas?
