Southhillbilly–re using canola oil instead of the less healthy peanut oil or lard—-peanut will take such high heat that if your deep frying correctky then you shouldnt have greasy food anyway—its when you fry at a lower temp –or as you noted-dont seal your eggrolls up—that you get greasy food—GOOD peanut oil deep frying is NOT at all greasy—as a matter of fact the best fried catfish i ever ate was done in deep peanut oil and you could eat a mess of it with your fingers and not need a napkin!!! This precisely the reason i invest in peanut oil which is alot more $ then canola!—and for french fries—i dont care if it is bad for NOTHING makes better fries then tallow or lard!!!!
btw—my deep fryer is a deep pan with a fry insert that sits on the stove top—works as well as any of the "Fry Family" and can cook alot more at a time.allthough one should remember to NOT OVERLOAD a deepfryer as it will cool down the oil and make for greasy food!!!!This is THE most commen mistake that folks make when deep frying!!!! Keep the batches small—the oil hot–it will cook faster anyway and you really wont lose any time and get a much higher quality![:I][:p]
