Kirsby, I’m with you on your cheese choices but I’d like to add just about any cheese made by Carr Valley. Here’s a link to their mail order but I think it’s best to stop for a visit and a free sample. I love their Gran Canaria.
I’d hate to pick just one cheese as a favorite but I wouldn’t mind alternating between this one, the ones you listed and Roth Kase’s Butterkase.

I’ve mentioned this on quite a few threads but I’ll do it again; Roadfooders could easily fall in love with Wisconsin’s Green County and its cheese, beer, meat markets, bakeries, restaurants and scenery with a special shout out to New Glarus.
