I’ve got a cheese that I’ll bet most of you have never heard of: Vasterbotten. It’s from the North of Sweden and it’s kinda like a cross between an extra, extra sharp cheddar and a parmesan. It has those tiny little holes and calcium crystals that crunch a bit. Hardtack, butter and Vasterbotten…Heaven!

A Swedish deli like Wikstroms in Chicago carries it regularly.
