I guess there is no accounting for the tastes of individuals. My daughter, (now twenty -two) will not eat the crust off of bread. She will however eat liver, oysters, calamarie… My wife, the lovely Laura, will not eat ANYTHING with dill in it. In fact she will not eat anything that has been pickled. No saurkraut, no dills, no gerkins; nothing! Both will eat cheese in any formulation. Old and hard or new and runny. Which brings me to me. I will eat almost anything, sea urchin is out and so is goat cheese and yogurt. But vegatables; from beets to turnips and anything in between. My favorite meal was sweetbreads at Craft in NYC.
How could you not like cheese? I guess it is because you don’t.
After being so prosaic I would suggets just a simple grilled cheese sandwich or a macaroni and cheese just to get you started. Use mild cheese, maybe a monteray or a munester and see how it goes. If you can drink milk or love whipped cream you can appreciate cheese.
Best to all,
PS. My Dad and my favorite Uncle would make Limburger and onion sandwiches all the time. They asked me if I would like a taste. I said yes and I love them to this day. Sometimes food and the experience of eating can be powerfully evocative.
