Your local classified site or craigslist or kijiji for used carts. You might get lucky on ebay, but might have to travel to get it.
Talking to the local people who are in the biz might help.
A new gas griddle will probably run you 2 or 3 grand.
And I would expect the cart to be similar in price for a used one.
Then costs for mods??
Cheapest and easiest route would be to go with one of the grill toppers over a bbq. But I’m kinda frugal.

Have you found out all your local rules? Health department, fire commissioner, etc.
Have you found out about licencing?
Every state, city, and even county can have different rules.
Some people are more helpful than others.
Some people THINK they know what they are talking about, yet they are clueless.
I spent at least 3 months trying to talk to as many people as I could, did tons of research, talked to the city people over and over and over.
Thought I had finally figured it all out, at least a dozen times.
Changed my plans several times.
It got so bad, that I almost registered the domain name ….. rightbacktosquareone.com because that’s how it felt most of the time.
And yet I keep moving forward.
