This is a good point. Even with places that I regard very highly, I have seen differences depending on whether or not it was a peak time. I remember one year going to Mitchell’s BBQ in Wilson, NC on the way to and from the Outer Banks. On the way there it was during a lunch rush and it was about the best I’ve ever had. Then we went on the way back when it was kind of a between meal time of day and everything tasted warmed over. This is probably a bigger deal in places where the food is not really cooked to order.
