Here’s what Boston Coffee Cake had to say. I thought they might be interested in the observations noted in this thread, but apparently they are not.

Since we are an all frozen plant the sell by date is determined by when the store takes the cake out of their freezer and puts it out for sale. It is the store s responsibility as the cakes can be frozen for up to 6 months and we have no idea when the store takes them out of the freezer.
