This may be somewhat difficult for folks to find, but I’ve become partial to a hot sauce called Alaga. The word comes from a shortening of Alabama-Georgia. It’s made in Montgomery and is the table sauce at a great restaurant downtown called Martha’s Place. Alaga is the official sponsor of the Montgomery Biscuits minor league baseball team. Anyway, this sauce is made with a little cane syrup, which tames down the vinegariness of it somewhat. The company makes pure cane syrup, which I can find in stores in Tennessee. The hot sauce, however, hasn’t made it this far "north." Whenever I’m in Alabama, I stock up.
