Ace, the Sam’s Club in Melbourne sells Sabrett’s, Nathan’s, & Best Kosher. Steaming requires trial and error. A steam tray needs ample space above the water to function correctly. Fill the water pan with less water, starting with 1/2 inch. I boil my dogs and steam the buns(in a steamer box) with absolutely no problems. Most Chicago hot dog stands boil their dogs. If you a high volume, boiling is the only way to go.
