CSD: thanks for your response……. First id like to thank you for your advice on the steamer trays… I will work something out, I am thinking of remodifying the cart and changing it from a three steamer tray system to either a 6 tray or a very large tray with seperations but no matter i will be increasing its size for a much larger capacity. I will also be lowering the heat source to give a bit more space between flame and pans. I also believe i will take you up on placing dogs directly into water. Yes i am aware of sams selling those products, however they are still pricey as far as what Ive heard that others are purchasing their products.
for example Sabrett w/ nat casing at sams is $9.72 for 3 lbs which is $3.24 per lb for #8s
which comes to .41 per dog……. Ive heard of others buying dogs for like .26 and .28 each big difference profit wise…. also I cant find chips better than like $9.?? a case of 50 1oz bags which comes out to somewhere around .18 or .19 per bag and thats for 1 oz….. I thought this was a bit high also.. but ant find any less expensive…. ok Ive rambled on enough….. thanks again for your response its appreciated
