Your REAL question here is how to /where to find the right person to oversee your stand. BUT this is not "just" a hot dog stand…this venture will be the culmination of your inner vision of a hot dog utopia, right ? Hey, I’m hip with that and I’m picking up what your laying down. Your the type of guy who analyzes and observes little ( and big) details in an operation, formulating ideas that would improve the business if it were yours. I do it all the time, from color schemes, to menu offerings, to obvious PR moves.
There is no easy answer to your question, but this approach might work : Find someone who you can share your vision with. I would be bluntly honest with said person about wages and conditions (and your expectations) and after all the bad news, I would also be bluntly honest about monetary compensation increasing along with sales and specific target goals.
I think someone would work a lot harder if your going to give them a piece of your dream. It will be tough to find the right person though in any event.
