If it were I. Just Financing the operation. I would find somone that WANTS to work for them self. Someone that WANTS to make Hotdogs for 8 hours a day.
I would lay down the pay real simple. They get a %. No min wage deals or anything. They will runt he cart the way you as the capitol owner see fit. Then they will make a % of the revenue till things get lined out and set. Then at that time you will retalk about wages.
When I started my Mowing company. I tried paying guys to do the 60 lawns a week. I had bad turn over for the 2 man crew.
I had a guy come to me that wanted a % and the ability to market. I said fine. I was so fed up, I was ready to just say quit. I was making money, BUT I was always having to hire a new person and get them trained. The customers suffered.
HE STILL works with me. Mowing 100 lawns a week with 3 folks getting his percentage (the two laborers get a weekly salary). We have added 2 more crews as well each doing the same. The formen gets percentage.
The wife and I have been looking at getting a new Dog stand as well. We have a woman that approched us. She is a single mother that can work 7 am till 7 pm. She wants percentage. She also has the county health cert.
Not sure what we will do yet, just having a person making 7 bucks a doing all the work and see the cash come in. They will in my opinon not last long. I say give them a reason to be nice, sell more and make sure there income is able to rise. When their actions can make them more money in % of income. They will also use their heads to make more sells.
