I love the old timey, Cantonese restaurants, the type with which I grew up. A friend calls it New York Chinese Food. They’re just hard to find. Loved when Szechuan and Hunan Chinese regional dishes came on board but the mall-zation or Americanizing of Chinese dishes by Panda and all the copies have ruined it. Instead of cooking Chinese dishes, the restaurants are now preparing what they think we like.
Walk in to a Chinese Buffet and try to identify the Chinese dishes. Good luck.
