My basic salsa, (not hot sauce) includes all you said plus all the different peppers I can throw in, plus some sort of citrus juice – lime, lemon, or orange,+ a touch of sugar.
Another good one is 1 lb. of roasted tomatillos, 2 avocados, several peppers, lime juice, a bit of cumin, a clove or 2 (or 7) of garlic, shake of oregano, a dash of vinegar-blend the whole shebang together-Break out the Margaritas and chips-put on bathing suit and sit by the pool or beach,
indulge.
