What would you liken skate to? I’ve had smoked eel at sushi places.

My aunt once made moose stew (Canada), and my mom was shocked at the difference between grain-fed moose vs. the mooses (Meece?) she had as a child who had eaten bark and whatever else they felt like. I have to say, it was dang good stew.
