Elise I have eaten a lot of the items that are on that menu. In fact I am marinadeing a Hare for tonights dinner as we speak. The hogs cheeks are called quingale in Italy treated much like bacon and very good when you can get it from a wild boar. I’ve even had the pleasure of having Real veal only once though it’s almost impossible to get. We have a market here in Boston that most of the items on the menu if not all of them are avalible. Savnors on Charles ST. but you pay thru the nose. Chow Jim
