My butcher told me they had to be instructed on how to cut them, only because some restaurant chain (about a year ago?) was selling them cheap — "steak" plus "$9.95" got lots of people excited. The butcher said to prepare them like flank steak, however you may choose to, and cutting across the grain, like flank steak, to serve. But he also said flank steak was better.
