Once in Barbados, at the Star hotel on the habor in Bridgetown a bumboat came up to the window with a bunch of flying fish. We bought them and asked the kitchen to cook them up. They came to us beautifully sauted, stuffed with very hot peppers. I think this was my first experience with anything very hot and I have favored just mildly hot ever since.

What do flying fish taste like? Are they oily? What fish would you liken them to?
