OK, here’s the concept, you have all the typical state fair type foods, corn dogs, "barbecue" sandwiches, chicken/beef/shrimp-on-a-stick, cotton candy, caramel/candy apples, onion blossoms, deep fried Twinkies and Oreos, deep fried EVERYTHING for that matter! Here’s the kicker: All these different delicacies are prepared at individual kiosks like at the State Fair. The kiosks are scattered around your warehouse size restaurant with straw and sawdust strewn all over the floor. Seating is on picnic benches which are also scattered about the place. People wander through the joint stopping at various kiosks ordering what they like, then meeting at an agreed upon picnic table. I’ve heard there are numerous shopping malls around the country that have tried a similar approach. I believe they call them food courts.
P.S. A little snarky at the end there, I know, but I do actually kinda like this idea. You could add to the authenticity of the place if you could find a way to pipe in that State Fair smell, kind of a combination of wet hay, farm animal waste, cigarette smoke and diesel fuel exhaust. My lips are smackin’!
