Cottage cheese in homemade egg noodles is a pretty popular eastern European dish. Particularly with the Germans and Poles … and I just had it the other day at a local Hungarian restaurant, the dish was Turos Teszta and was noodles with cottage cheese and bacon. Wonderful.
For the cracklings portion, traditionally you can add either chicken or pork cracklings … griebenschmaltz or gribenes or grieben to the germans … or, to the Poles it is skwarki (wonderful on pierogi too). Or of course, bacon works too.
