Hmm.
Here’s one of the best things I ever put in my mouth.

Cod in wine cheese sauce.
Two pounds choice cod fillets
Flour, seasoned with salt, pepper.
Oil and butter for frying.

heat the oil butter mixture. Dredge the cod in seasoned flour.
lower the cod into the hot oil, brown on both sides. while this is happening, make the sauce.

Melt two tablespoons of butter in a pan. Add two tablespoons all purpose flour. Cook the flour, stir, for a minute or so..
add one and a half cups milk, and a half a cup white wine. Increase the heat and stir constantly, until it is thick. Take off the heat and add a cup of parmesan cheese, stir while the cheese melts, and add salt and pepper to taste. If it’s too thick, add more wine.
Remove the fish to a serving platter, and pour the sauce over.
serve with crusty bread or boiled potatos.
